From Eastern Cuisine: Honey Chicken Pieces with Vegetables and Sesame
I decided to experiment a little in the kitchen and, after the substantial Latvian Christmas roasts with their rich side dishes, to prepare something seemingly lighter. Following an online recipe as a guide, I realised there is room to explore various variations of this dish. So this won't be quite a classic recipe.
You will need:
- chicken breast;
- soy sauce;
- honey;
- tomato sauce;
- potato starch;
- onion and garlic;
- salt;
- sesame seeds;
- colourful bell peppers;
- oil for frying;
- noodles.
Method:
Boil salted water and pour it over the noodle blocks (do not cook the noodles). Leave them to soak and soften while the chicken is being prepared.
Cut the chicken breast into small pieces. Coat first in soy sauce, then in potato starch. Heat a generous amount of oil in a frying pan. Fry the chicken pieces on both sides until they are browned.
Transfer to a plate or paper towel to drain.
Meanwhile, fry the onions in the pan until golden, add the red and yellow bell peppers cut into strips, and a clove of garlic if desired (to taste). Once everything has lightly fried, add a large tablespoon of honey and allow everything to caramelise.
Sprinkle sesame seeds over the drained chicken pieces.
Add tomato sauce to the caramelised onions and peppers in the pan and bring to the boil. Add the chicken pieces and stir well to combine.
Arrange the noodles and chicken pieces with vegetables on plates. Fresh herbs can be sprinkled over if you have some to hand. Eat using classic chopsticks or the familiar fork.
