Fresh Salad with Pomegranate Seeds and Brie Cheese

Yesterday, on a Sunday afternoon, after a two-year break I once again invited guests to celebrate Čaks's birthday. Wanting to treat them to something new, I made a fresh salad with pomegranate seeds and Brie alongside the festive roast. The salad met with approval, so I decided to share it with iinuu.lv readers.

You will need

• pot-grown fresh leaf lettuce;
• 10 cherry tomatoes;
• 1 long, peeled cucumber;
• 1 large pomegranate, seeds removed;
• 250g Brie cheese;
• 100g walnuts;
• lemon salad dressing.

Method

In a large glass bowl, tear the lettuce leaves. Add the cucumber cut into cubes and the cherry tomatoes halved. Then remove the seeds from the pomegranate and add them to the salad.

Cut the Brie into pieces. Add it and the walnuts to the salad. Pour the lemon dressing over everything (Spilva makes one available at Rimi, or you can make your own) and toss well. Voilà - the salad is ready! Bon appétit!
